| oz | Pearl barley | | 3
| pint | Water | | 3
| each | Lemons | | 3
| oz | Sugar |

Procedures:
| 1 | Put the barley & water into a pan, bring to a boil & then cover & simmer for 30 minutes. | | 2 | Strain the liquid into a large jug. | | 3 | Peel the lemons very thinly without any white pith. | | 4 | Remove the pith from the lemons & slice the fruit. | | 5 | Put the fruit & lemon peel into the jug with the barley liquid. | | 6 | Stir in the sugar & let go cold. | | 7 | Strain into a clean jug & store in the refrigerator for up to 5 days |
