Ingredients:
1 1/2 cupOnions, chopped
1 cupCelery, chopped
1 cupRed pepper, chopped
3 clGarlic
2 tbspCumin
2 tbspChili powder
2 tbspOregano
1 tbspSeasoning salt
1/8 tbspCayenne pepper
56 ozCanned Italian plum tomatoes
-including juice (2 cans)
3 cupKidney beans
1 1/2 cupBoiling water
1 1/2 tbspCatsup
1 1/2 cupTVP (Textured Vegetable
Protein) flakes
1 1/2 tbspHot sauce, to taste
Habanero peppers or others
-optional
Procedures:
1Saute onions, celery, red pepper and garlic until tender.
2Add seasonings.
3Saute briefly, then add chopped tomatoes and beans.
4In a small bowl, mix boiling water and catsup and pour over tvp.
5Let soak for 5 mins.
6Add to chili mixture.
7Season with hot sauce and peppers.
8Cook 30-60 mins.
9Serve...with antacid tablets
