Mozzarella meat loaf

Ingredients:
1 largeOnion, coarsely chopped
1 tbspOlive oil
1 Sweet red pepper, chopped
1 clGarlic, finely chopped
1 tspLeaf basil, crumbled
1/2 tspLef thyme, crumbled
1 1/2 lbsLean ground beef
1/2 lbsGround pork
1 cupOld-fashioned oats, uncooked
2 Egg whites
4 ozPart-skim mozarella cheese
-cut in ?inch cubes
1/2 cupGrated Parmesan cheese
2 tbspParsley, chopped
3/4 tspSalt, optional
1/8 tspPepper
1/4 cupCatsup
Procedures:
1Preheat oven to moderate (375 degrees).
2Line jelly-roll pan with aluminum foil.
3Saute onion in oil in large skillet over medium heat 3 minutes.
4Add red pepper, garlic, basil, and thyme, saute 5 minutes.
5Combine beef, pork, oats, egg, whites, mozzarella, parmesan, parsley, optional salt, and pepper in large bowl.
6Add vegetable mixture.
7Shape into large oval on prepared pan.
8Bake in moderate oven (375 degrees) for 30 minutes.
9Brush loaf with catsup.
10Bake 25 minutes or until cooked through.
11Let stand 10 minute before slicing.
12Judi"s notes: i would bake this meat loaf in a loaf pan due to possible grease escaping from the jelly roll pan.
13I would also spoon off some of the fat from the loaf after 30 minutes.
