Ingredients:
2 cupWater
1/2 cupPinto beans, soaked
1 tbspOil or bacon drippings
Onion, sliced
1 tspOregano, dried, crumbled
2 tspCumin
2 tbspTortilla flour
1/3 cupDry red wine
16 ozTomatoes, whole drained
2 tbspChili powder
Green chile, jalapeno or
1/2 xGreen pepper, seeded chopped
Garlic clove, minced
2/3 lbsBoneless pork, ? cubes
1/3 lbsBeef stew meat, ? cubes
Procedures:
1* mixed with water to form a paste (optional) combine water and beans in medium saucepan and bring to boil over medium high heat.
2Reduce heat and simmer until tender, about 1 hour.
3Heat oil in large skillet over med-high heat.
4Add onion, green pepper, and garlic.
5Saute until tender.
6Transfer to dutch oven and set aside.
7Add pork and beef to same skillet.
8Brown well.
9Stir into vegetables in dutch oven.
10Add beans and their liquid along with tomatoes and seasonings.
11Mix well, cover and simmer 1 hour.
12Add wine and cook, uncovered, 30 minutes.
13Season with salt and pepper.
14If mixture is too liquid, stir in some of the tortilla flour paste to thicken.
