Ingredients:

| cup | Pinto beans, soaked | | 1
| tbsp | Oil or bacon drippings | | | Onion, sliced | | 1
| tsp | Oregano, dried, crumbled | | 2
| tsp | Cumin | | 2
| tbsp | Tortilla flour | | 1/3
| cup | Dry red wine | | 16
| oz | Tomatoes, whole drained | | 2
| tbsp | Chili powder | | | Green chile, jalapeno or | | 1/2
| x | Green pepper, seeded chopped | | | Garlic clove, minced | | 2/3
| lbs | Boneless pork, ? cubes | | 1/3
| lbs | Beef stew meat, ? cubes |

Procedures:
| 1 | * mixed with water to form a paste (optional) combine water and beans in medium saucepan and bring to boil over medium high heat. | | 2 | Reduce heat and simmer until tender, about 1 hour. | | 3 | Heat oil in large skillet over med-high heat. | | 4 | Add onion, green pepper, and garlic. | | 5 | Saute until tender. | | 6 | Transfer to dutch oven and set aside. | | 7 | Add pork and beef to same skillet. | | 8 | Brown well. | | 9 | Stir into vegetables in dutch oven. | | 10 | Add beans and their liquid along with tomatoes and seasonings. | | 11 | Mix well, cover and simmer 1 hour. | | 12 | Add wine and cook, uncovered, 30 minutes. | | 13 | Season with salt and pepper. | | 14 | If mixture is too liquid, stir in some of the tortilla flour paste to thicken. | | 15 | Fred drexel, 1981 world champion chil |
