Ingredients:
2/3 cupOKRA PODS
1 cupCOARSELY CHOPPED ONIONS
1 tspDRIED ITALIAN SEASONING
1/2 cupCELERY, CHOPPED
1/2 cupCHOPPED GREEN PEPPER
1/4 tspGARLIC POWDER
2 canWHOLE TOMATOES *
10 1/4 canCHICKEN BROTH
1/2 cupDRY SHERRY
1 tspCHICKEN FLAVORED BOUILLON
1/4 tspSALT
1/4 tspPEPPER
2 cupCUBED CHICKEN BREASTS **
Procedures:
1* whole salt free canned tomatoes, chopped, undrained ** about 1 lb. of chicken, skinned, boned, fully cooked -------------------------------------------------------------------- ~ remove tips and stems from okra, cut into ?inch slices.
2Set aside for later.
3Coat a large kettle with cooking spray and heat to medium high heat.
4Add onions, celery, peppers and garlic.
5Cook for 5 minutes.
6Add all remaining ingredients except for the chicken and cook for about 1 hour or until the vegetables are tender.
7Add chicken; stir well.
8Remove from heat; cover and let stand for 5 minutes.
