Ingredients:
2 tbspOlive oil
1 Clove garlic, chopped
12 ozChicken breast, diced
4 cupWater
4 ozStraw mushrooms, chopped
2 tbspLemon juice
2 smallGreen chilies, sliced in
-rings
2 Spring onions, chipped
1 pinchGround ginger
GARNISH
Coriander leaves
Procedures:

2Straw mushrooms are available canned in the oriental section of many supermarkets or fresh in asian groceries.
3Enoki mushrooms would probably be a good substitute, although i haven"t tried that...
4heat the oil in a saucepan or wok and fry the garlic until soft but not brown.
5add the chicken and stir-fry for 5 minutes.
6Cool a little.
7Add the water and mushrooms.
8Bring to the boil and simmer for 10 minutes.
9Add the lemon juice.
10Cover, and cook gently for a further 10 minutes.
11add the chilies, spring onions and ginger.
12Remove from the heat.
13Sprinkle with coriander leaves before serving.
