Ingredients:
8 ozSmoked hot sausage, sliced

1 medOnion, in ? chunks
2 smallCelery, bias-cut ? thick
2 medTomatoes, in 1" pieces
1 largeRed potatoes, unpeeled, in

1 1/2 cupChicken stock or canned
-broth
1 tspDried thyme
Salt and freshly ground pepp

Procedures:

2Cook, uncovered over medium-high heat, stirring often, until the sausage is browned, 4-5 minutes.
3Add the celery, tomatoes, potatoes, chicken broth and thyme.
4Cover and bring up to high pressure.
5Reduce heat to stabalize pressure and cook for 8 minutes.
6Reduce pressure and season with salt and pepper to taste.
