Ingredients:
5 lbsCHICKEN OR SMOKED TURKEY
2 ea BUNCHES OF GREEN ONIONS
3/4 tspGARLIC POWDER
1/2 cupCHOPPED PARSLEY
1 cupCHOPPED GREEN PEPPERS
4 ea LARGE ONIONS, CHOPPED
3 ea BAY LEAVES
1 tspBLACK PEPPER
2 tbspWORCESTERSHIRE SAUCE
1 xSALT TO TASTE
1/2 tspTHYME
1 tspTABASCO SAUCE
1 tspCAYENNE PEPPER

Procedures:
1**** add herbs such as basil or rosemary as desired -------------------------------------------------------------------- ~- boil the chicken and remove meat from bones.
2Place broth and meat in the refrigerator for several hours to chill.
3Skim grease from top of pot.
4Pour into large kettle and add remaining ingredients.
5(optional ingredients to add are 8 oz. tomato sauce; 2 ?lbs.
6Or more of okra; 1 lb. smoked sausage.
7Cook over low heat for 2 hours then thicken with roux.
8Roux: ?cup oil ?cup flour mix oil and flour before heating.
9Cook over medium low heat in a heavy skillet until it turns dark brown.
10Stir while cooking to keep from sticking.
11Add to gumbo and cook until soup starts to thicken.
12Serve over rice.
