| tbsp | WORCESTERSHIRE SAUCE | | 1
| x | SALT TO TASTE | | 1/2
| tsp | THYME | | 1
| tsp | TABASCO SAUCE | | 1

Procedures:
| 1 | **** add herbs such as basil or rosemary as desired -------------------------------------------------------------------- ~- boil the chicken and remove meat from bones. | | 2 | Place broth and meat in the refrigerator for several hours to chill. | | 3 | Skim grease from top of pot. | | 4 | Pour into large kettle and add remaining ingredients. | | 5 | (optional ingredients to add are 8 oz. tomato sauce; 2 ?lbs. | | 6 | Or more of okra; 1 lb. smoked sausage. | | 7 | Cook over low heat for 2 hours then thicken with roux. | | 8 | Roux: ?cup oil ?cup flour mix oil and flour before heating. | | 9 | Cook over medium low heat in a heavy skillet until it turns dark brown. | | 10 | Stir while cooking to keep from sticking. | | 11 | Add to gumbo and cook until soup starts to thicken. | | 12 | Serve over rice. |
