Ingredients:
4 largePotatoes
2/3 cupButter
2/3 cupFlour
1 1/2 quartMilk
4 Green onions -- chopped
1 cupSour cream
2 cupBacon, cooked and crumbled
5 ozCheddar cheese -- grated
Salt and pepper
Procedures:
1Heat oven to 350°F.
2bake the potatoes until fork tender.
3Melt butter in a medium saucepan.
4Slowly blend in flour with a wire whisk until thoroughly blended.
5Gradually add milk to the butter flour mixture, whisking constantly.
6Whisk in salt and pepper and simmer over low heat, stirring constantly.
7Cut potatoes in half, scoop out the meat and set aside.
8Chop half the potato peels and discard the remainder.
9When milk mixture is very hot, whisk in potato.
10Add green onion and potato peels.
11Whisk well, add sour cream and crumbled bacon.
12Heat thoroughly.
13Add cheese a little at a time until all is melted in.
