Ingredients:
2/3 cupButter or margarine
2/3 cupAll-purpose flour
7 cupMilk
4 largeBaking potatoes, baked
-cooked, peeled & cubed
4 Green onions, sliced
12 Bacon strips, cooked and
-crumbled
1 1/4 cupShredded cheddar cheese
1 cupSour cream
3/4 tspSalt
1/2 tspPepper
Procedures:
1In a large soup kettle, melt butter.
2Stir in flour, heat and stir until smooth.
3Gradually add milk; stirring constantly until thickened.
4Add potatoes and onion.
5Bring to a boil, stirring constantly.
6Reduce heat; simmer for 10 minutes.
7Add remaining ingredients; stir until cheese is melted.
8Serve immediately.
9Yields about 2 ?quarts.
