Chicken, corn and tomato chowder

Ingredients:
1 Chicken (3 pounds), cut up
1 medOnion, chopped
1 tspPoultry seasoning
1 canCorn kernels (16 ounces)
-with liquid
1 canWhole tomatoes (16 ounces)
-drained and cut up
1 tspLemon juice
Salt and freshly ground
-pepper
Procedures:
1Note: this recipe is even better with fresh corn and tomatoes.
2in a large saucepan, simmer the chicken in 4 cups with onion and poultry seasoning for 45 minutes.
3Remove chicken and let cool; reserve the broth.
4skim fat from chicken broth.
5Remove meat from chicken; discard skin and bones.
6Cut meat into bite-size pieces.
7in a large non-aluminum saucepan, combine chicken, chicken broth, corn, tomatoes and lemon juice.
8Simmer for 30 minutes.
9Season with salt and pepper to taste.
10serves 8.
