Chicken a la reine soup

Ingredients:
1/4 cupMargarine
1 cupFinely diced onion
1 cupFinely diced celery
1 cupFinely diced carrots
1/3 cupAll-purpose flour
8 cupChicken broth
1/3 cupFinely diced green pepper
1/3 cupFinely diced red pepper
1 cupCooked rice
1 cupDiced cooked chicken breast
1 cupHalf & half, heated
1 dashSalt and white pepper
Procedures:
1Heat margarine in a large saucepan and cook onion, celery and carrots over low heat until tender, stirring occasionally.
2Add flour and cook for 5 minutes, stirring constantly.
3Do not brown.
4Gradually stir in chicken broth until blended.
5Bring to a boil, cover, and cook over low heat 5 minutes.
6Add green and red pepper, rice and chicken and heat another 5 minutes.
7Stir in hot half and half.
8Heat but do not boil.
9Season to taste with salt and pepper.
10Makes 10 cups.
