Ingredients:
3 lbsChicken pieces, skin & fat

Flour, all-purpose
1/4 cupOlive oil
2 tbspGarlic, minced
3 canChicken broth, 14oz each
1 canHunt's whole tomatoes, 14oz
1 canHunt's tomato paste
16 Pearl onions
1 1/2 tspSeasoned salt
1 1/2 tspGround cumin
4 Sprigs oregano
4 Sprigs thyme
1 Bay leaf
1/4 tspRed pepper flakes, crushed
8 ozKielbasa or smoked turkey

2 cupNew potatoes, cut in chunks
2 cupCarrots, cut into chunks
2 cupZucchini, cut into chunks
2 cupYellow squash, cut into
. chunks
1 canWhole kernal corn, 8oz
Cilantro, chopped
Procedures:
1In a bag, coat chicken with ?cup flour.
2Bone chucken in dutch oven in hot oil; remove and set aside.
3Drain drippings, except 1 tsp, from pot.
4Saute 1 tbsp flour and garlic in drippings 30 seconds.
5Stir in next 10 ingredients starting with chicken broth and ending with red pepper flakes.
6Bring to a boil, reduce heat and simmer, uncovered, 20 minutes.
7Add chicken and kielbasa, cover and simmer 20 minutes longer.
8Skim excess fat.
9Add vegetables, simmer, covered, 30 minutes longer.
10Sprinkle with cilantro before serving.
