Canadian pea soup

Ingredients:
1 lbsDried yellow peas
1 tbspButter
1 largeOnion, chopped
1 tbspSalt
1 lbsSalt pork
12 cupWater
1 tspDried savory
Pepper to taste
Procedures:
1Place peas in a colander; rinse under running water.
2Put peas in a large stockpot; cover with cold water and allow to soak overnight.
3(if using split peas, there"s no need to presoak).
4Drain.
5in a large pot, melt the butter and saute onion until softened, about 2 minutes.
6Add peas, salt, salt pork, water and savory.
7Bring to boil; cover and simmer for about 1 ?hours or unntil salt pork is tender.
8Remove pork; chop and turn to soup.
9continue simmering soup until peas are tender, about 30 minutes longer.
10remove 2 cups peas from soup and process in food processor; stir back into the soup.
11adjust seasoning and serve.
12serves 6.
