Cafe victoria's golden lentil soup

Ingredients:
3 cupGolden lentils
1/2 medOnion, diced
1 largeCarrot, diced
3 tbspButter
6 cupChicken stock
1 Bouquet garni (parsley
Bay leaf, thyme, rosemary
Garlic)
1/2 cupWhipping cream
Salt and pepper
Procedures:
1Rinse lentils and pick over.
2Cover and sweat onions and carrots in 2 tablespoons butter then add drained.
3Cook covered, 5 minutes.
4Add stock, bring to boil and skim.
5Add bouquet garni and simmer soup until lentils are very soft.
6Remove bouquet garni, transfer soup to blender or food processor and blend until smooth.
7Return to saucepan and simmer.
8Blend in cream and remaining tablespoon of butter.
9Heat through, season with salt, pepper and serve
