Ingredients:
Pan juices from baked ham
1/2 cupBeef broth
2 tbspBrown sugar
2 tbspCurrant jelly
1 tbspSherry
1 tbspCornstarch
1 tspDijon mustard
1/4 cupCurrants or raisins
Procedures:
1Serve with any ham to make it a special dish.
2Pour pan juices from baked ham through wire strainer, including onions and apples.
3Press on solids to extract as much juice as possible.
4Degrease strained juices.
5Add broth, sugar, and jelly to pan juices and heat to a boil in a saucepan.
6Mix cornstarch with mustard and sherry.
7Wisk rapidly into simmering sauce and stir for several minutes until blended and slightly thickened.
8Add currants or raisins and simmer 10-15 minutes before serving
