Ingredients:
20 California dried figs
-- stewed, unsweetened
2 cupSifted all-purpose flour
4 1/2 tspBaking powder
2 tbspSugar
1 tspSalt
2 Eggs
1/3 cupShortening, melted
3/4 cupMilk (about)
Procedures:
1Butter muffin pans generously.
2Snip stems off stewed figs and place figs in mixing bowl.
3Beat them hard, until whirled into small bits.
4Sift flour, measure and sift again with baking powder, sugar and salt.
5Add dry ingredients to figs and mix lightly.
6Add eggs, shortening and milk, and stir together until just mixed.
7Fill muffin pans half full.
8Bake in hot oven (400°F).
9For about 12 minutes or until lightly browned.
