Ingredients:
2 cupSifted cake and pastry flour
3 tspBaking powder
3 tspButter
1/2 tspGrated lemon or orange rind
1/2 cupWhite or brown sugar
3/4 tspSalt
3/4 cupMilk
1/2 cupClean white snow *
1/2 cupRaisins
Procedures:
1Mix dry ingredients in a bowl.
2Make a depression in the centre and pour in the milk, butter and grated rind.
3Stir slightly.
4Add snow and raisins.
5Stir only until dry ingredients disappear.
6Spoon into 12 buttered muffin cups filling 2/3 full.
7Bake at 400°F for 15 to 18 minutes.
8Serve hot with butter or preserves.
9*clean frost scraped from a freezer may be used instead of snow.*
