Raw apple muffins

Ingredients:
4 cupApple, diced
1 cupSugar
2 Eggs, beaten
1/2 cupOil
2 tspVanilla
2 cupFlour
2 tspBaking soda
2 tspCinnamon
1 tspSalt
1 cupRaisins
1 cupWalnuts, broken in large

Procedures:
1Servings: 16
2preheat oven to 325 degrees.
3Grease 16 muffin tins.
4Put 3 mixing bowls on the counter.
5Mix the apples and sugar in one bowl and set aside.
6Put the eggs, oil and vanilla in the second bowl, and stir to blend well.
7In the third bowl, put the flour, baking soda, cinnamon, and salt, and stir the mixture with a fork until blended.
8stir the egg mixture into the apples and sugar, and mix thoroughly.
9Sprinkle the flour mixture over the apple mixture and mix well.
10(may want to use your hands as this is a stiff batter) sprinkle the raisins and walnuts over the batter and mix until they are evenly distributed.
11Spoon into the muffin tins.
12bake for about 25 minutes, or until a straw comes out clean when into the center of a muffin.
13Serve warm.
14These are dense, moist and good!
