Ingredients:
2 1/2 cupFlour
1 3/4 cupSugar
2 tspBaking powder
1/2 tspBaking soda
1/2 tspSalt
2 cupButtermilk
1/2 cupVegetable oil
2 largeEggs
8 cupBran flakes cereal
1/2 cupRaspberry jam
Procedures:
1A moist and chewy muffin from the underground deli in ashland, oregon.
2makes about 24.
3preheat oven to 350°F.
4Line muffin tins with paper muffin cups.
5Combine first 5 ingredients in medium bowl.
6Whisk buttermilk, oil and eggs in large bowl to blend.
7Add dry ingredients and cereal and stir until just blended.
8Spoon ?cup batter into each muffin cup.
9Using small spoon,make well in center of each and fill well with 1 tsp jam.
10Spoon remaining batter over.
11Bake until tester inserted into centers comes out clean, about 25 minutes.
12Turn muffins out onto racks.
13Cool slightly.
14Serve warm or at room temperature.
