Ingredients:
1 1/2 cupQUAKER Oats uncooked
-(quick or old fashioned)
1 cupAll-purpose flour
2/3 cupFirmly packed brown sugar
1 tspBaking powder
1/2 tspBaking soda
1/2 tspGround cinnamon
1/4 tspGround nutmeg
1/4 tspSalt (optl)
1/2 cupRaisins
3/4 cupApplesauce
1/2 cupApple juice or skim milk
2 Egg whites or
-1 egg, slightly beaten
2 tbspVegetable oil
1/4 cupQUAKER Oats uncooked
-(quick or old fashioned)
Procedures:
1Heat oven to 400°F.
2Line 12 muffin cups with paper baking cups or spray bottoms only with no-stick cooking spray.
3Combine dry ingredients including raisins; mix well.
4Add combined applesauce, apple juice, egg whites and oil, mixing just until dry ingredients are moistened.
5Fill muffin cups almost full.
6Sprinkle remaining ?cup oats evenly over batter; patting gently.
7Bake 20 to 22 minutes or until golden brown.
8Let muffins stand a few minutes; remove from pan.
