Ingredients:
STREUSEL
1/4 cupQUAKER Oats uncooked
-(quick or old fashioned)
1 tbspFirmly packed brown sugar
1 tbspMargarine or butter, melted
1/8 tspPumpkin pie spice
MUFFINS
1 1/2 cupAll-purpose flour
1 cupQUAKER Oats uncooked
-(quick or old fashioned)
3/4 cupFirmly packed brown sugar
1 tbspBaking powder
1 1/2 tspPumpkin pie spice
1/2 tspBaking soda
1/2 tspSalt (optl)
1/2 cupChopped nuts (optl)
1 cupCanned pumpkin
3/4 cupMilk
1/3 cupVegetable oil
1 Egg, lightly beaten
Procedures:
1Heat oven to 400°F.
2Line 12 medium muffin cups with paper baking cups or lightly grease bottoms only.
3For streusel, combine all ingredients; mix well.
4Set aside.
5For muffins, combine dry ingredients and nuts; mix well.
6Add combined pumpkin, milk, oil and egg; mix just until dry ingredients are moistened.
7Fill muffin cups almost full.
8Sprinkle streusel evenly over batter, patting gently.
9Bake 22 to 25 minutes or until golden brown.
10Let muffins stand a few minutes; remove from pan.
