Peanut muffins w/hidden jelly surprise

Ingredients:
1 Egg
1/2 cupWhole Milk
1/4 cupButter, Melted
1 1/2 cupAll-Purpose Flour
1/2 cupGranulated Sugar
2 tspBaking Powder
Ds Salt
3/4 cupPeanuts, Chopped
12 tspFruit Jam or Jelly of
-your choice
Procedures:
1Preheat the oven to 400 degrees.
2Beat the egg.
3Stir in the milk and the melted butter.
4Sift the flour, sugar, baking powder and salt together.
5Mix the egg mixture with the flour mixture - do not overmix.
6Add half the chopped peanuts.
7Pour the batter into well greased muffin tins, filling each ?way to the top.
8Drop 1 teaspoon of jam or jelly into the center of each muffin.
9Spoon additional batter into each muffin tin, filling each 2/3 to the top.
10Sprinkle with the remaining chopped peanuts.
11Bake about 20 minutes.
12Serve warm or at room temperature.
