Ingredients:
2 cupFlour
1/4 cupSugar
1/2 tspSalt
1/2 tspBaking soda
2 tspBaking powder
2 Eggs
1 cupButtermilk
1/2 cupVegetable oil
Procedures:
1Mix dry ingredients.
2Beat eggs with buttermilk and oil.
3Add to dry ingredients.
4Mix, leaving mixture slightly lumpy.
5Fill well-greased muffin tins two-thirds full.
6Bake at 425 °F.
7For 15-20 minutes, or until brown.

9variations: blueberry: fold in 1 cup fresh blueberries you have tossed with 1 tablespoon flour and 1 teaspoon grated orange or lemon rind (opt)..

11Cinnamon-apple: add ?cup finely chopped apples.
12Mix 2 tablespoons sugar and ?teaspoon cinnamon and sprinkle on top of each muffin before baking.
