Peach muffins

Ingredients:
3/4 cupSugar
1/2 cupShortening
2 eachEggs, Small
2 1/4 cupPeach Puree, Fresh, 6 to 8
2 cupWhole Wheat Flour
1 tspCinnamon
1 tspBaking Soda
1 tspBaking Powder
1/4 tspSalt
1 tspVanilla
1 cupPecans, Chopped, Optional
Procedures:
1Note: make the puree by peeling and pitting 6 to 8 fresh peaches and blending them to a puree in a blender.
2Cream the sugar and shortening together, then add the eggs and blend well.
3Add the peach puree and the dry ingredients.
4Mix well.
5Add the vanilla and chopped nut, if used, stirring until well blended.
6Spoon into muffin tins that have been sprayed with a non-stick coating.
7Bake at 325 °F.
8For 25 to 30 minutes or until done.
9Let cool in the tins for a few minutes before removing them to a rack to cool.
