Ingredients:
| 3/4
| cup | Sugar | | 1/2
| cup | Shortening | | 2
| each | Eggs, Small | | 2 1/4
| cup | Peach Puree, Fresh, 6 to 8 | | 2
| cup | Whole Wheat Flour | | 1
| tsp | Cinnamon | | 1
| tsp | Baking Soda | | 1
| tsp | Baking Powder | | 1/4
| tsp | Salt | | 1
| tsp | Vanilla | | 1
| cup | Pecans, Chopped, Optional |

Procedures:
| 1 | Note: make the puree by peeling and pitting 6 to 8 fresh peaches and blending them to a puree in a blender. | | 2 | Cream the sugar and shortening together, then add the eggs and blend well. | | 3 | Add the peach puree and the dry ingredients. | | 4 | Mix well. | | 5 | Add the vanilla and chopped nut, if used, stirring until well blended. | | 6 | Spoon into muffin tins that have been sprayed with a non-stick coating. | | 7 | Bake at 325 °F. | | 8 | For 25 to 30 minutes or until done. | | 9 | Let cool in the tins for a few minutes before removing them to a rack to cool. |
