Ingredients:
1 1/2 cupFlour
1/4 cupSugar
2 tspBaking powder
1/2 tspSalt
1/3 cupChopped almonds or walnuts
1/4 cupRaisins, chopped if desired
2 tbspGrated orange peel
1 Egg, beaten
1/2 cupOrange juice
2 tspVegetable oil
Procedures:
1Combine flour, sugar, baking powder and salt in a mixing bowl.
2Stir in nuts, raisins and orange peel.
3combine beaten egg, orange juice and oil.
4Pour into flour mixture.
5Mix only until flour is dampened and fruit/nuts well distributed.
6turn into a greased 8x4 (or 9x5) loaf pan.
7Bake at 350°F 40 minutes or until cake tester comes out clean.
8(check larger pan sooner).
9let cool in pan 10 min; turn out and cool completely on rack.
10Wrap in waxed paper and store overnight before slicing.
