Oatmeal millet muffins

Ingredients:
1 1/4 cupBoiling water
1 cupUncooked instant rolled
Oats
1/2 cupButter at room temperature
(1 stick)
1 cupWhite sugar
1 cupBrown sugar
2 tspVanilla
2 Eggs
1 1/2 cupAll-purpose flour
1 tspBaking soda
1/2 tspSalt
1/2 cupMillet
Procedures:
1Preheat the oven to 350.
2Butter 12 muffin cups.
3Stir the oats into the boiling water, cover, remove form heat and let stand 20 minutes.
4Cool.
5Sift together the flour, baking soda and salt.
6In a large mixing bowl, beat the butter until creamy.
7Slowly add the white and brown sugars, beating until smooth and creamy.
8Add the vanilla and the eggs and beat until well blended.
9Add the cooled oatmeal to the butter mixture and stir well to blend.
10Add the flour mixture and stir.
11Stir in the millet.
12Spoon the batter into the muffin cups, filling about 2/3 full.
13Bake for about 15 minutes, or until a straw inserted in the center of a muffin comes out clean.
14Gently run a table knife around the edge of each muffin, lift them out and place on a rack to cool.
15These muffins freeze well.
