Ingredients:
Light vegetable oil spray
2 largeEgg whites
1/3 cupMaple syrup
3 tbspFresh squeezed Orange Juice
1 cupSkim milk
1 tbspVanilla extract
1 tspGround cinnamon
1/8 tspGround allspice
1/8 tspGround cloves
1/8 tspGround nutmeg
1 tbspOrange zest
1 1/2 cupRolled Oats -- (not quick

1 cupWheat flour
1 tspBaking powder
1/4 cupPecans -- chopped
1/4 cupCranberries -- dried
Procedures:
1Preheat the oven to 350 degrees.
2spray a 12-well muffin tin 3 times with the vegetable oil.
3put the egg whites in a large mixing bowl and whisk until frothy.
4Whisk in the maple syrup, orange juice, and milk.
5Add the vanilla, cinnamon, allspice, cloves, nutmeg, and orange zest.
6Whisk to blend.
7Stir in the oats, flour, and baking powder with a wooden spoon.
8Fold in the pecans and dried cranberries.
9fill the muffin tin with the batter (each cup should be approximately two- thirds full).
10Bake for about 20 minutes, until the muffins are firm in the center.
