Nutty mincemeat muffins

Ingredients:
1 1/2 cupAll-purpose flour
1/3 cupSugar
2 tspBaking powder
1/2 tspSalt
1/4 cupButter or margarine, soft
2 largeEggs, beaten
3/4 cupMincemeat, brandied
1/2 cupApple juice
1/4 cupWalnuts, chopped
Procedures:
1Preheat oven to 375 °F.
2sift dry ingredients together into a medium-size bowl; make a "well" in the center.
3In separate bowl, cream butter, add eggs, mincemeat and apple juice and beat well; add to dry mixture, stirring just enough to moisten.
4Gently stir in nuts.
5Spoon batter into greased muffin pans, filling about 2/3 full.
6bake 15 to 20 minutes.
7makes 12 muffins.
