Ingredients:
1 cupBoiling water
3 cupRaw bran
3 eachEgg whites
3/4 cupSugar or less
2 cupNon-fat buttermilk
1/3 cupCanola oil
1/2 cupRaisins or dates
1 1/2 cupWhole wheat flour
1 cupUnbleached white flour
2 1/2 tspBaking soda
Procedures:
1Preheat the oven to 375 degrees.
2Mix raw bran and boiling water in a large bowl and set aside.
3Combine egg whites, sugar, buttermilk, oil and dried fruit in a medium bowl.
4Add to bran in the large bowl.
5In a medium bowl, mix the flours and baking soda.
6Add to bran mixture and mix until just blended.
7Spoon into lightly oiled or paper lined muffin tins.
8Bake for 15-20 minutes.
9Batter can be kept in refrigerator in a covered jar for several weeks and baked as needed.
10Makes 30 muffins.
