Marmalade muffins

Ingredients:
1 cupOatmeal
1 cupButtermilk
1 cupAll purpose flour
1/4 cupGranulated sugar
1 tspBaking powder
1/2 tspEach baking soda, salt
1 Egg
1/4 cupMelted butter
1 tspVanilla
1/3 cupMarmalade or raspberry jam
-if preferred
1/4 cupFinely chopped almonds
-(optional)
Procedures:
1Yield: 12 medium muffins stir together oatmeal and buttermilk in small bowl.
2Add almonds if using.
3Let stand 10 minutes.
4Meanwhile, stir together flour, sugar, baking powder, baking soda and salt in large bowl.
5Stir in egg, butter and vanilla.
6Mix oat mixture just to combine.
7Spoon small amount of batter into each greased muffin cup.
8Place about 1 tsp marmalade or jam, in centre of each and spoon in remaining batter.
9Cups should be about three-quarters full.
10Bake in preheated 400 g oven about 20 minutes or until tops are golden brown and slightly firm to the touch.
