Chicken in wine and tomato sauce

Ingredients:
3 lbsCHICKEN, CUT INTO SERVING PIE
Salt & pepper
2 tbspButter
2 tbspOlive oil
1 1/2 cupMushrooms, thinly sliced
1/2 cupFinely chopped onions
1/2 tspFinely minced garlic
1 Bay leaf
2 Sprigs fresh thyme
1/2 cupDry white wine
2 cupCored and diced tomato
1/4 cupTomato paste
1/2 cupChicken broth
2 Sprigs fresh parsley
Procedures:
1Sprinkle the chicken with salt and pepper to taste.
2Heat the butter and oil in a heavy skillet and add the chicken pieces, skin side down.
3Cook until golden brown on one side, about 5 min. turn the pieces and cook on the other side about 2 min. Pour off the fat from the skillet, then scatter the mushrooms over the chicken.
4Add the onion,garlic,bay leaf and thyme and cook about 5 min. Add the wine and stir well.
5Add the tomatoes,tomato paste,chicken broth and parsley.
6Bring to a boil.
7Cover and simmer for 10 min. Dicard the herbs before serving.
