Ingredients:
1 cupSugar or less
1 cupApplesauce
1/4 cupOil
3 eachEgg whites
3 tbspSkim milk
1 cupWhole wheat flour
1 cupUnbleached white flour
1 tspBaking soda
1 tspBaking powder
1/2 tspCinnamon
1/4 tspNutmeg
1/4 cupChopped walnuts
1/2 cupRaisins
1/2 cupChopped dates
Procedures:
1Preheat oven to 350 degrees.
2In a large bowl combine sugars, applesauce, oil, egg whites and milk.
3Mix thoroughly.
4Add flours, baking soda, baking powder and spices.
5Combine until well mixed.
6Stir in nuts, raisins and dates.
7Spoon into lightly oiled or paper lined muffin tins and bake for 20-30 minutes.
8Makes 36 muffins.
