Ingredients:
2 cupAll-purpose flour
1 tbspGranulated sugar
2 tspBaking powder
1 tspGarlic powder
1 tspDry mustard
1/2 tspSalt
2 Egg whites, lightly beaten
1 cupSkim milk
1/2 cupGrated carrots
1/4 cupChopped green onions
2 tbspOlive oil
2 tbspNonfat plain yogurt
Procedures:
1Preheat oven to 375=b0f.
2into a large bowl, sift together the flour and the next six dry ingredients.
3In a small mixing bowl, combine the egg and the rest of the ingredients.
4Blend the egg mixture gently into the flour mixture.
5Coat muffin pan with cooking spray.
6Spoon batter into muffin cups.
7Bake 18-20 minutes.
