Ingredients:
2 cupSelf-rising cornmeal
1 tbspSugar
1/2 tspSalt
1 1/4 cupMilk
2 largeEggs, lightly beaten
1/4 cupVegetable oil
1 tspWorchstershire sauce
1/4 tspHot sauce
2 cupThinly sliced fresh okra
-(about ?pound)
1/4 cupChopped onion
Procedures:
1Combine first 3 ingredients in a medium bowl; make a well in center of mixture.
2Combine milk and next 4 ingredients; add to dry ingredients, stirring just until moistened.
3Fold in okra and onion.
4Grease muffin pans, and place in a 400" oven for 5 minutes.
5Quickly spoon batter into prepared pans, filling two-thirds full; bake at 400" for 20 minutes or until lightly browned.
6Remove from pans immediately.
7Yield: 1-?dozen
