Ingredients:
1 cupWheat/Oat Bran cereal
3/4 cupMilk
1 cupUnbleached All-Purpose Flour
2 1/2 tspBaking Powder
1/2 tspSalt
1/4 cupGranulated Sugar
1/2 cupSeedless Raisins *
1/2 cupChopped Walnuts
1 Large Egg
1/4 cupVegetable Oil
Procedures:
1* finely chopped pitted dates may be substituted to get date muffins.
2~--------------------------------------------------------------------- ~-- mix cereal and milk.
3Let stand a few minutes until most of the milk is absorbed.
4Grease 12 2 ?inch muffin cups.
5Heat oven to 400 °F.
6Sift flour, baking powder, salt and sugar into a medium-sized bowl.
7Stir to mix well.
8Add dates/raisins and nuts; toss to mix.
9Add egg and oil to soaked cereal and beat well with a fork.
10Pour into flour mixture and stir only until dry ingredients are moistened.
11Batter will be lumpy.
12Drop batter into prepared pans, filling each cup half to two-thirds full.
13Bake about 30 minutes, or until browned.
14Remove from pan and serve hot with butter and jelly or preserves.
