Ingredients:

| cup | Flour | | 1
| tsp | Baking powder | | 1/2
| tsp | Baking soda | | 3/4
| tsp | Ground cinnamon | | 1/4
| tsp | Salt | | 1/3
| cup | Sugar | | 1
| each | Large egg | | 1/4
| cup | Low-fat buttermilk | | 3
| tbsp | Butter, melted | | 1/2
| cup | Minced unpeeled tart apple | | 3/4
| cup | Blueberries, fresh or frozen |

Procedures:
| 1 | Combine dry ingredients in 1-quart mixing bowl. | | 2 | Mix well. | | 3 | Add egg, buttermilk, butter and minced apple to bowl. | | 4 | Stir to combine (disregard any small lumps). | | 5 | Gently stir in blueberries. | | 6 | If blueberries are frozen, bake batter immediately. | | 7 | Otherwise, chill batter until thickened, covered airtight, at least 2 hours or overnight. | | 8 | Drop 2 tbs chilled batter, 2 inches apart, onto greased baking sheets. | | 9 | Sprinkle with more cereal, if desired. | | 10 | Bake in center of 425°F oven until tops have taken slight tinge and edges are very lightly browned, about 7-8 minutes, rotating pans if browning irregularly. | | 11 | Do not overbake. | | 12 | Cool on racks. | | 13 | Makes 20 (3- inch) muffies. |
