Blueberry-apple muffies

Ingredients:
1 cupFlour
1 tspBaking powder
1/2 tspBaking soda
3/4 tspGround cinnamon
1/4 tspSalt
1/3 cupSugar
1 eachLarge egg
1/4 cupLow-fat buttermilk
3 tbspButter, melted
1/2 cupMinced unpeeled tart apple
3/4 cupBlueberries, fresh or frozen
Procedures:
1Combine dry ingredients in 1-quart mixing bowl.
2Mix well.
3Add egg, buttermilk, butter and minced apple to bowl.
4Stir to combine (disregard any small lumps).
5Gently stir in blueberries.
6If blueberries are frozen, bake batter immediately.
7Otherwise, chill batter until thickened, covered airtight, at least 2 hours or overnight.
8Drop 2 tbs chilled batter, 2 inches apart, onto greased baking sheets.
9Sprinkle with more cereal, if desired.
10Bake in center of 425°F oven until tops have taken slight tinge and edges are very lightly browned, about 7-8 minutes, rotating pans if browning irregularly.
11Do not overbake.
12Cool on racks.
13Makes 20 (3- inch) muffies.
