Blueberry lemon muffins

Ingredients:
1 tbspLemon juice
1 cupMilk
1 Egg, beaten
1/4 cupVegetable oil
1/4 cupMolasses
1 cupNatural bran
3/4 cupWhole wheat flour
3/4 cupAll-purpose flour
1/3 cupPacked brown sugar
1 1/2 tspGrated lemon rind
1 1/2 tspBaking powder
1/2 tspBaking soda
1 cupBlueberries (fresh or
-frozen)
Procedures:
1In bowl, stir lemon juice into milk.
2Let stand 1 minute to sour.
3Stir in egg, oil and molasses.
4in large bowl, combine bran, whole wheat and all-purpose flours, sugar, lemon rind, baking powder and baking soda.
5Add milk mixture and blueberries, mixing just until combined.
6spoon into non-stick or paper-lined muffin tins.
7Bake in 375 °F oven for 20 to 25 minutes or until firm to the touch.
8makes 12 muffins.
