Ingredients:
1 1/2 cupFlour
1/2 cupWhole wheat flour
1/2 cupCornmeal
3/4 cupSugar
2 1/2 tspBaking powder
1/2 tspBaking soda, and salt
1/2 cupEach... buttermilk, and
-orange juice
1/4 cupMargarine or butter, melted
1 Egg, beaten
1 tbspGrated orange zest
2 cupFresh or frozen blueberries
Procedures:
1Makes 18 muffins
2in large bowl, combine flours, cornmeal, sugar, baking powder, baking soda and salt.
3In small bowl, combine buttermilk, orange juice,margarine, egg and zest.
4Add to flour mixture and mix only until moist.
5Stir in blueberries.
6Spoon into prepared muffing cups.
7Bake at 400°F for 20-25 minutes, or until wooden pick inserted near center comes out clean.
