Apple-pecan muffins

Ingredients:
1 1/4 cupAll-purpose flour
1 tspBaking soda
1/2 tspGround cinnamon
1/8 tspSalt
1 cupSugar
1/2 cupVegetable oil
1 largeEgg
2 tbspFresh lemon juice
1 1/2 tspVanilla extract
3/4 tspGrated lemon peel
2 cupGreen apples, coarsely
Grated peeled (abt 2 lg)
1/2 cupChopped toasted pecans
(about 2 ounces)
Procedures:
1Preheat oven to 350 degrees.
2Grease ?cup muffin cups.
3Sift all purpose flour, baking soda, ground cinnamon and salt into medium bowl.
4Combine sugar, oil, egg, lemon juice, vanilla and lemon peel in large bowl; whisk to blend.
5Mix in dry ingredients, then apples and pecans.
6Spoon 1/3 cup batter into each prepared muffin cup.
7Bake until tester inserted into centers comes out clean, about 35 minutes.
8Turn muffins out onto rack; cool slightly.
9Serve warm.
