Ingredients:
1 2/3 cupFlour
1 tspBaking soda
1/2 tspBaking powder
1/2 tspSalt
1 tspCinnamon
1/2 tspAllspice
1 cupPumpkin puree
1/4 cupEvaporated milk
1/3 cupShortening
1 cupFirmly packed light brown
-sugar
1 Egg
1 cupBlueberries
1 tbspFlour
Streusel Topping:
2 tbspFlour
2 tbspSugar
1/4 tspCinnamon
1 tbspButter
Procedures:
1Servings: 12 muffins
2(combine until crumbly)
3combine first 6 ingredients.
4Combine pumpkin and evaporated milk, until well blended.
5Cream shortening and sugar in large mixer bowl.
6Add egg, beat until mixture is fluffy.
7Add flour mixture alternately with pumpkin mixture, beating well after each addition.
8Combine blueberries and flour.
9Gently stir into batter.
10Fill 12 large paper-lined muffin cups ?full.
11Sprinkle streusel over top of muffins.
12Bake in moderate oven (350°F) 40 minutes or until toothpick inserted in center comes out clean.
