Ingredients:
12 ea Dried red chili peppers
-- soaked, seeded & chopped
1 tspKaffir peel, chopped
4 tspCilantro root, chopped
1 tspSalt
1 tspBlack peppercorns, ground
2 tspGalanga powder
1 tspLemongrass, chopped
1 tspGarlic, chopped
1/2 cupShallots, chopped
Procedures:
1Soak all dried ingredients until soft (see note).
2place all ingredients in a blender or food processor & blend until a smooth paste is formed.
3If using dried ingredients, add some water, but not too much.
4note: use 2 ts dried kaffir, or 2 ts dried lemon grass to replace the fresh called for above.
