Deluxe pork chop suey

Ingredients:
1 cupShredded fresh lean pork
1 medOnion, sliced thin
1 tbspSoya sauce
3 cupFresh bean sprouts

1/2 lbsFresh bean sprouts
1/2 cupShredded bamboo shoots
1/2 cupSliced water chestnuts
1/2 cupSliced canned mushrooms
-OR
1 cupSliced fresh mushrooms
3/4 cupSliced celery (~1 lg stalk)
Salt for seasoning
Pepper for seasoning
1 tbspCorn starch, dissolved in
1/3 cupWater
2 tbspOil
Procedures:
1Shred pork into narrow strips, slice onion.
2Marinate both in soya sauce for 20 minutes.
3In meantime slice all other ingredients and arrange on platter, ready to cook.
4Assemble corn starch solution.
5Place oil in wok, turn heat on it.
6As oil is heating turn wok so that oil will as mush cooking surface as possible.
7When oil begins to smoke slightly, add marinated pork and onions.
8Stir fry about 2 minutes until pork is browned.
9Place wok cover over pork and cook a further 3 minutes, making sure that the meat is thoroughly cooked.
10Uncover wok, add bean sprouts and celery.
11Stir and cook 2 minutes.
12Add all the rest of ingredients, add salt and pepper for taste.
13Stir fry thoroughly.
14Cover and cook 3 more minutes.
15Uncover wok, add corn starch solution.
16Be sure you stir up your corn starch solution thoroughly before adding to wok.
17Shut heat off.
18Stir all food together.
19Serve over rice.
20Note: chicken, beef, veal, shrimps may be substituted for pork
