Ingredients:
1 Y soup mix
1 Dry green split
Peas
1 Pearl barley
1 (14-oz) alphabet macaroni
1 Lentils
1 1/2 cupBrown rice
4 cupDry minced onion
1 Y soup stock
1 1/3 cupHearty soup mix (above)
2 Sl carrots
2 Celery, chopped
1 1/2 cupCabbage, shredded
2 Tomato sauce
1 24 oz can vegetable juice
1 lbsGround beef, cooked (opt)
Procedures:
1Hearty soup mix: combine ingredients in a large airtight container.
2Stir to evenly distribute ingredients.
3Label container.
4Store in a cool, dry place.
5Use within 6 months.
6Shake before using.
7Makes about 12- ?cups of hearty soup mix.
8Hearty soup stock: put 6 cups water in a large kettle or dutch oven.
9Add 1-1/3 cups hearty soup mix and salt.
10Bring to a boil.
11Cover and simmer 1 to ?hours.
12Add carrots, celery, cabbage, tomato sauce, and vegetable juice cocktail.
13Add cooked ground beef or other leftover meat, if desired.
14Simmer 20 more minutes, until vegetables are cooked.
15Yield: 6 to 8 servings.
