Ingredients:
1 1/4 cupCoriander seeds
2/3 cupCumin seeds
1/3 cupFenugreek seeds
1/2 cupBesan (gram flour)
1/2 cupGarlic powder
1/3 cupPaprika
1/3 cupTurmeric
1/3 cupGaram masala
1 tspDried powdered curry leaves
1 tspAsafoetida
1 tspGround ginger
1 tspRed chile powder
-such as New Mexican
1 tspDry mustard
1 tspBlack pepper
-freshly ground
Procedures:
1In a dry skillet, toast the coriander, cumin and fenugreek seeds, then grind them together in a spice mill.
2Combine with remaining ingredients and mix well.
3This powder improves as it becomes better blended, the longer it is stored, it is best in about a month, but don"t store it longer than 18 months.
