Ingredients:
1/3 cupFinely chopped onion
1/3 cupFinely chopped carrot
1/3 cupFinely chopped celery
1/3 cupOlive oil
2 tbspSalt
Pn Sugar
2 cupCanned tomatoes with juice
-roughly chopped
8 ozMozzarella cheese, grated
-(about 2 cups)
1 1/2 cupVery thinly sliced red onion
Procedures:
1For the sauce: saute the vegetables in oil about 5 minutes.
2Add salt, sugar and tomatoes.
3Simmer 45 minutes, stirring occasionally.
4Put a pizza stone on the lowest oven rack.
5Preheat to 400°F.
6(to use a metal pizza pan instead, do not preheat the pan).
7Spread ?cup sauce over 2 12" pizza shells to within ? of edge (reserving the rest of the sauce for another purpose).
8Sprinkle with the cheese and top with the onion.
9Bake 15 minutes, or till the crust is golden brown.
10Makes 2 medium pizzas, 8 slices each.
