Ingredients:
1 tbspCloves
2 tbspBlack peppercorns
1/2 cupCoriander seeds
3 tbspCumin seeds
1 tbspFennel seeds
1 tbspBlack mustard seeds
3 smallDried hot red chilies
-piquins or santakas
-seeds and stems removed
1/4 cupGround cardamon
1/4 cupTurmeric
3 tbspGround fenugreek
1 tbspGround ginger
Procedures:
1In a dry skillet, separately toast the cloves, peppercorns, coriander, cumin, fennel and mustard seeds over medium heat, taking care not to burn them.
2Combine the toasted ingredients and the chilies in a spice mill and grind to a fine powder.
3Combine with the remaining ingredients and mix until a uniform color is achieved.
4Store in an airtight container.
5Makes a medium hot curry powder.
