| 1 | Lightly grease 2 large baking sheets. |
| 2 | In a large bowl, dissolve yeast in lukewarm water. |
| 3 | Blend in 2 eggs and butter. |
| 4 | Add 5 cups bread mix. |
| 5 | Stir well. |
| 6 | Add additional bread mix to make a soft, but not too sticky dough. |
| 7 | Knead about 5 minutes until dough is smooth. |
| 8 | Roll pieces of dough into ropes about ?inch in diameter and 18 to 24 inches long. |
| 9 | Form into pretzel shapes. |
| 10 | For pretzel sticks, cut dough into 5 to 6 inch lengths. |
| 11 | Place on prepared baking sheets. |
| 12 | Preheat oven to 42Brush tops of pretzels with beaten egg and sprinkle with coarse salt. |
| 13 | Bake immediately 12 to 15 minutes, until brown and crisp. |
| 14 | Makes 12 to 15 large pretzels. |
| 15 | Variation for a chewier pretzel, drop pretzel-shaped dough into a pan of boiling water. |
| 16 | When dough floats to the top of the water, remove it. |
| 17 | Preheat oven to 400. |
| 18 | Brush with egg and sprinkle with coarse salt. |
| 19 | Bake about 30 minutes. |
