| 1 | Break egg into bowl, beat and stir in sugar and milk. |
| 2 | Add mix gradually. |
| 3 | Stir to combine thoroughly. |
| 4 | Rub muffin cups well with shortening or use paper liners in muffin pan. |
| 5 | Drop about half the batter by spoonfuls into muffin cups. |
| 6 | Place 2 or 3 slices of banana on top of the batter and pour melted butter over the fruit. |
| 7 | Sprinkle brown sugar over the banana slices in each cup. |
| 8 | Drop remaining batter by spoonfuls into muffin cups. |
| 9 | Bake in a 400°F. oven about 15 mintutes. |
| 10 | Yield: 12 large individual coffee cakes |
