Ingredients:

| lbs | Smoked cod | | 1/2
| lbs | Onions | | 1/2
| lbs | Shelled peas | | 10
| fl oz | Milk * | | 1
| oz | Flour | | 1
| tsp | Dry mustard | | 1
| oz | Butter | | 2
| lbs | Mashed potato |

Procedures:
| 1 | * (or substitute 5 oz milk and 5 oz cream) . | | 2 | Chop onions roughly and fry in butter until tender. | | 3 | Remove from heat an stir in flour and mustard. | | 4 | Add milk. | | 5 | Return to heat and stir until thickened. | | 6 | Add cod, cut into ?inch cubes, and peas. | | 7 | Turn into ovenproof dish and cover with mashed potatoes. | | 8 | Bake in a moderate oven at 400f/200c, for 35-45 minutes, or until golden brown. | | 9 | . | | 10 | (though not traditional, the addition of 2-3 oz of cheddar cheese to the sauce makes this an extremely tasty dish). |
